Brunch Quiche

One way to make wonderful use of your fresh vegetables this time of year is a hearty, satisfying quiche for breakfast or brunch. I never made a Quiche until not long ago, because I didn’t realize how easy and customizable they are. You can add any meat you want or leave it out and make it vegetarian. Adding cheese and using a premade pie crust for convenience just makes your late mornings fulfilled with comforting goodness to fill your tummies. Let me share with you how I made this specific one and let me add, the kids loved it!

Ingredients: 1 premade frozen pie crust, room temperature 4 eggs ¼ cup milk or cream ½ to 1 lb. smoked sausage, diced ½ sweet onion, diced finely 1 tomato, diced 1 cup fresh spinach Salt, pepper, garlic powder to taste 1 cup shredded sharp cheddar cheese Preheat your oven to 375 degrees. In a mixing bowl, add the eggs and milk and scramble well with a fork. Add the remaining ingredients and fold it all together. Pour into the pie crust, place the pie on a baking sheet to prevent a mess in case it spills over and bake at 375 for about 30 minutes or until eggs are set and a toothpick or fork comes out clean.

Let it rest for 10 minutes for slicing to serve.
