Jo's Kitchen Meatballs and Gravy

Often we hear kids say they don't like meatloaf and if we're being honest, it doesn't always look upscale appetizing, especially to picky eaters. I have found that instead of turning ground beef into a delicious loaf, making individual meat balls is a wonderful way to catch the kids' eyes and not only are they scrumptious, but easy to serve and store. Let me share with you how I make homemade meatballs and savory beef gravy.

Ingredients:

2 lbs. ground chuck 1/2 cup breadcrumbs 1/2 minced onion 1 large or 2 small eggs 1 tbsp. minced garlic Salt and pepper to taste 2 tsps. Worchestershire sauce 1 tsp. ground mustard powder 1 tsp. milk Preheat your oven to 350 degrees. Line a roasting pan with foil for easy clean up and put the rack on top. Mix all the ingredients in a large mixing bowl, using your hands! (the most useful kitchen tool) Form into medium balls and place on a plate or pan. Put them into the fridge to firm up. 30 minutes should do it. Place the balls 2' apart on the roasting rack and bake for 35 minutes or until browned and done.

Gravy: Add 2 tbsp. of beef bouillon to a cup of water and mix well. In a sauce pan, melt a tbsp. of butter. Add a tbsp. of flour and whisk together, making a roux. Slowly pour in the bouillon, whisking constantly until the gravy thickens. Add more if needed. Measure with your heart on this gravy!

Serve the meatballs hot with the gravy poured over the top. Pair these with green beans, macaroni and cheese, mashed potatoes, or just a crunchy piece of toasted bread. You can't go wrong.
