Although it doesn't feel like it and we need rain so bad it isn't funny, it is October. The Holidays will be here before we know it. I know it's hard to get in the cozy feels when the weather doesn't cooperate but the season of Fall calls for soup whether it's 97 degrees outside or not. I haven't made soup in a quite a while, but I am ready for it. Let's encourage one another to be hopeful for rain and not stress over things we can't change. Times are hard for a lot of people right now. Groceries are sky high and gas is out of reach. But when we use what we have and utilize things in our pantry we can make a meal for our families that goes far and feels our bellies leaving us satisfied and happy. The soup I will be making soon, is a good classic homestyle vegetable beef soup. Let me share with you all how to make it. And remember, you can make soup out of whatever you have in your kitchen. Make those leftovers come to life when you're out of ideas.
Ingredients: If you have homemade sauces, use them.
1 lb. ground beef 1/2 lb. ground sausage 1 large or 2 small cans of diced tomatoes 3 fresh carrots, sliced 1 onion, diced 1 bell pepper, diced 3 potatoes, diced 2 cans tomato sauce 1 can green beans 1 can whole kernel corn Beef broth Salt, pepper, garlic powder, and onion powder to taste Start by browning your ground meats in a large stock pot or boiler with the onion and bell pepper. Drain the grease. Add everything but the green beans and corn. After adding the sauce, fill with beef broth until it covers the soup. Bring to a boil, boil for 10 minutes, lower the heat to simmer. Cover with a lid and simmer for an additional 20 minutes. Add the beans and corn to it. Cover again and simmer for at least 30 minutes. I like to let mine simmer for over an hour and move to the warmer until ready to serve.
Pair this cozy soup with cornbread. This soup is easy and customizable. Make it your own! I have many more recipes for beef vegetable soup but this one is classic.
ENJOY!
